This Ancient Probiotic Recipe Might Shock You

In the jungles of South America, there is a slightly sweet and bitter brew that has been drunk for thousands of years.

It’s called masato, and the way it is made might make you wince, but the process is a scientific marvel. You see, the recipe requires a specific root called manioc to be boiled, mashed and then chewed up by the women of a tribe — who then spit it back out into a pot.

Yes, saliva is one of the key ingredients in this formula.

The mashed and chewed manioc is then left to sit in earthen vessels for a number of days. Over time, a natural fermentation process takes hold and turns it into a refreshing and probiotic-rich drink.

I know, it sounds kind of intense. But the days of fermentation transform the raw ingredients into something brand new – that often has a surprisingly fruity flavor.

One of the major themes I spoke on was — why did so many ancient cultures rely on fermented foods?

After all, in the folk-traditions of Russia, kombucha is the superstar health beverage of choice. In Germany and the Slavic countries, it’s sauerkraut. In Ethiopia, it’s a fermented bread called Injera that accompanies most meals. In many realms of the Middle East, it’s yogurt – which was actually discovered in ancient Mongolia (between you and me, it involved a leather flask full of milk, a galloping horse and good old father time…)

It seems that we humans have been devouring these pungent, living foods for millennia… how come?

Well, it all comes down to one remarkable word – your microbiome (otherwise known as the TRILLIONS of friendly bacteria and other microbes that live IN and ON your body).

Turns out that these highly intelligent colonies of organisms inside us can help to reverse just about every disease that we modern humans face…  and they love probiotic foods. But only if you eat the right ones…
